Christmas on a budget .

Last year was a practice run. 2 years ago I had a fall that resulted in an injury that has left me unable to walk unassisted I am in pain and need help with the simplest of tasks . I had income protection and business expense policies with MLC but they stuffed it all up. They stopped paying me and Centerlink say they can't because they received something that says I am being paid. So I was left without money at Christmas . Last year this was tough but I am getting good at making a little stretch a long way.

The Menu - I had 2 kgs of potatoes and a jar of mayonnaise an onion some ham and boiled eggs I made potatoe salad cost $5-$6 and feeds 12- 16 people

I couldn't afford a ham so I went to the deli and bought up all the sliced ham salami roast pork roast beef and silverside Woolworths sold off everything at $5/ Kg . I got a 2kg selection with 6 different meats.

A green salad consists of lettuce and apples dressed with a simple vinegar oil and garlic dressing strawberries can be included too.

I had a small selection of apricots plums and nectarines these cost $7- I also served nuts and some home brand crackers with some cheese .

I brought a dozen fresh eggs , cream and a passion fruit and made a pavlova for desert the total spend for Christmas lunch for 8 people was $40- there was food left over and we all had a great time . The act of breaking bread together at Christmas is what we need to remember . In the end we all have times where money is tight. It's about enjoying life.

Two of my guests brought wine and champagne another brought soft drinks and a fruit cake someone gave me a bottle of rum balls all round we had a good day.
